Fire Extinguishing

The NF EN 16282 standard addresses professional kitchens and establishes detailed requirements for fire protection devices installed in kitchens.

Large kitchens, reheating facilities, and each cooking station must have fire suppression systems adapted to the presented risks.

A large kitchen is considered any kitchen equipped with cooking appliances with a total useful power exceeding 20 kW.

Each kitchen must be equipped with an automatic fire detection and suppression system for oil fires (NF EN 16282, Article 7):

  • This system must be installed above any appliance using grease or oil.
  • It must be manually triggerable in the event of a fire.
  • Its power supply must also be able to be automatically cut off.
